After converting / importing an MS Excel file containing reporting relationships, into a Organizational Chart, is there any way of selecting multiple column details for Node / Edge details ???

Yes, you can use the Properties Mapper for this task. Please see the manual pages for Excel Import and Properties Mapper for an extensive description and small examples that show how to import additional data into yEd and how to map this data to visual properties like the label text.
