I need to understand which subset of HTML is supported. Is this the correct documentation?

Unfortunately, no. The document you linked to refers to JavaFX, a toolkit which is much newer/younger than yEd. yEd actually leverages Swing's HTML capabilities - i.e. HTML 3.2 is supported.
