How can you export the contents of a graph to excel for easier manipulation of the graph elements in excel for a re-import?

Unfortunately, yEd does not support exporting diagrams as spreadsheets.

Is there a roadmap to add the feature to export the metadata as .csv or xls. for easier editing in spreadsheet tools?

No, there is not. Honestly, while we do have this on our list of possible improvements, I do not think that we will implement this feature.
