The structure view cannot display text from multiple labels or values of multiple custom properties at once. It can display the text of the first label of a node or the value of one chosen custom property.
You can try to add a custom property for nodes (using "Edit" -> "Manage Custom Properties") whose value corresponds to the concatenated text of several or all of your node's labels and display that value.
