The structure view will always display the text of the first label of a node. It is not possible to display the text of any other label.
However, it is possible to display the value of a custom property. Thus if you add one custom text property for each of your labels (using "Edit" -> "Manage Custom Properties"), you can select the desired property in the drop-down list next to the structure view's seach text field.
