Same setting as off the tools menu however applied to all work by default. Make it unchecked (opt out) if you like within the preferrences by default.

I am not sure I understand your request. Are you asking for a way to have text wrapping in node labels enabled by default? While this is currently not configurable through yEd's preferences, you can slightly reduce the effort of having to enable text wrapping each time you create a new node with the following approach:

  1. Create a user-defined palette section.
  2. Create a new node.
  3. Configure the node's label as desired.
  4. Right-click the new node to open its context menu.
  5. Choose "Add to Palette".
  6. Go to your new palette section and double-click the new template. This will make the new template the default style template for nodes that are created by clicking on empty space in yEd's editor area.
