i'am looking for a possibility, to create an icon, with a defined number of crosspoints.

e. g. for a video-matrix-switcher. i have to make sure, that i don't use more than 8 in- an outputs of a device.

is there a way to do this?!

In yEd, there is no way to restrict the number of edges that are connected to a node.

While there is no way to restrict the number of edges, you can at least use yEd to check if there are nodes with to many connections: in the Select Elements tool, go to the Nodes tab, choose the criterion Degree (which is the name for the number of connections in graph theory) and enter a Minimal Degree of 9 or any number you like. This selects all symbols which have at least 9 connections.
