When manually entering text in yEd's inline editor for node and edge labels, you can use SHIFT+ENTER to start a new line.
Additionally, it is possible to use automatic text wrapping for node labels by changing property "Size" to "Fit Node Width" or "Fit Node Size" and property "Configuration" to "Cropping". Please note though, the cropping configuration does not support HTML formatted text.
