Unfortunately, it is not possible to create a custom bridge style in yEd. You have to choose one of the four predefined styles.
Rendering edges and edge features like bridges is not something that lends itself to pure visual customization. You almost always need some logic as well. Which is why yEd offers essentially only line type and line color in this regard.
