how do you flip arcs? instead of curving to the right, I want my edge to arc to the left.

Select the edge. Its path will be highlighted. Additionally, a bend highlight (small green circle) will appear. Move the mouse over that circle, press and hold the left mouse button, move the mouse to the left, release the mouse button as soon as the arc forms the desired curve.
