Is it possible to adjust 'tab-size'? (i.e. the size of the spacing after pressing the 'tab' key on my keyboard)

When editing a label, one can press the tab-key to move the insertion point by a defined amount of space. I find this space too large, I want to adjust the size of it. Is this possible?

No, it is not possible to adjust the tab size in yEd.
